A lot of the chilies of Capsicum chinense—your habaneros, your reapers, your bhuts and Trinidads—have beautiful floral flavour notes that can be obscured by all the spice. Trinidad perfume is an example of a number of cultivars from this species that have all of those notes, but very little heat. You’ll want to wait until they fully ripen to yellow from pale to really enjoy them. They’re mid- to long-season at 100 days to maturity, so grow them in a tunnel or greenhouse if you can.
