Corn Seed

The first time I used my own home-grown cornmeal in a recipe, I couldn’t believe what I tasted. Freshly milled corn, using corn varieties bred for flavour, is a revelation, and is nothing like what you find in the grocery store. The reason? Shelf-stable cornmeal has had its germ removed to increase shelf-stability.

So, gardeners, I implore you: consider replacing the sweet corn you grow with milling corn. Unless you’ve got a massive garden, you’ve got to choose, as corn is a frisky plant and the results of crossing varieties typically can easily spoil the intended use. I’ll grant that good sweet corn epitomizes long summer days, but it’s also very easy to find nearby, and comes cheap. Meanwhile 1-2 ears of grain corn will provide enough for a recipe of cornmeal or a bowl of popcorn. You’ll need a grain mill, or at least a good blender, but the whole process of harvest-shelling-milling-cooking is tonnes of fun.
